The Mitsitam Cafe features seasonal dishes using native foods from five regions of the Americas.

The Northwest Coast offers salmon and bison dishes and other regional flavors. At the Great Plains station have the Indian Frybread Taco or try a buffalo burger or chili. Don’t miss the Wild Rice Salad with cranberries. If you’re in the mood for some fresh trout or duck breast head over to the Northern Woodlands station and don’t forget to try some of the kale and apricots, YUM. If you’re feeling extra adventurous try the squid ceviche at the South America Station. The Meso America station, a crowd favorite, is where you can get your fill of the indigenous foods of Mexico and Central America. You won’t go wrong with these tacos or the chips and salsa.

There is something at the Mitsitam Cafe for everyone’s taste buds. Grab a tray and load up on delicious regional flavors.
